Please note that most of our customers prefer our Perfected Guar Gum®, which does not have the "beany" taste of traditional guar and is prehydrated for easy use.
Guar Gum is an all purpose thickener and stabilizer. It hydrates in cold water giving high low-shear viscosity but is strongly shear-thinning. Stable at pH range 5-7. It is a better emulsifier than locust bean gum. This gum shows viscosity synergy with xanthan gum.
Guar Gum works well for thickening cold liquids like cold cream sauces and works ever better when added to thicken hot liquids like soups or coating sauces.
This product is certified Kosher (Pareve) by the Orthodox Union
